Recipe for Vegetarian Pâté Puffs |
Vegetarian Pâté Puffs

1 package of frozen Puff Pastry and 3 packages of
(190 g) Végé Pâté (use
your favourite flavour, or all three flavours) yields 72 cocktail
sized bites or 48 appetizer sized portions. One popular brand of
Puff Pastry comes divided into two sections. You can make up half
one day, and save the rest for another occasion.
WARNING: these puffs are highly addictive, and exceedingly popular.
No matter how many you make, folks ask for more! At every potluck
I've taken them to, they are the first dish to evaporate. |
Thaw the Puff Pastry overnight refrigerated, or at room temperature for
an hour or so.
Preheat oven to 400 degrees F.
Empty Végé Pâté into a small
bowl. Each 190 g package will fill two pastry strips.

Flour a counter, and using a rolling pin, roll the
4 inch square of Puff Pastry to approximately 15 inches (38 cm)
by 12 inches (30 cm). Cut into three equal strips, each about 4
x 15 inches (10 x 38 cm).
Tip: using a pizza cutter works well for cutting the strips of
pastry |

Scoop up pate portions and roll between your hands,
forming narrow cigar shapes. Place them end to end down the centre
of each pastry strip. |

When you have all the pate distributed, moisten one
long edge of each pastry strip. Use water if you need the puffs
to be vegan, or a little whisked egg. |

Roll one long edge of the pastry up and over the
pate filling, tucking the long edge in a bit. Carefully move the
long roll to meet the moistened edge, gently but firmly to ensure
the seam is sealed.
Repeat with the other strips. You now have either 3 or 6 (depending
if you used the entire Puff Pastry package, or only half) 15 inch
long pate rolls.

Cut each roll into 4 equal sections. If you want
cocktail sized bites, cut each of the four segments into three short
puffs. If you want them longer, cut each of the four segments in
two. You can leave them even longer if you are preparing the pate
puffs for a lunch entree instead of using as an appetizer.
Tip: a sharp little knife works best for cutting up the Pate rolls |

Place the Pate Puffs, seam down, on oiled cookie
sheets, leaving space around each for puffing. Bake at 400 for 20
minutes or until golden brown. If you have two sheets in the oven,
you may need to switch them around partway through baking for even
browning. |
